Discover the exquisite flavours of our new Yirgacheffe coffee from Banko Gotiti Mill. Sourced from the renowned Gotiti region in Ethiopia, this exceptional coffee offers a vibrant and complex cup. Known for producing some of the world's most sought-after microlots, Yirgacheffe coffees are renowned for their bright acidity, floral notes, and delicate sweetness. The combination of high altitude, fertile soil, and favourable climatic conditions contributes to the exceptional quality of coffees produced in this region. The indigenous ‘heirloom’ varieties - which grow wild in Ethiopia - are responsible for the unique flavour notes which make for an unusual but beautifully refined cup - often characterised by strong citric acidity, sweet chocolate and floral/herbal notes of lavender, jasmine, bergamot and thyme.

 

Sustainable Farming Practices

 

Our Yirgacheffe coffee is shade-grown, ensuring a healthy ecosystem and preserving the delicate balance of nature. Ripe cherries are carefully selected and dried in the sun using traditional methods, preserving their unique flavours and aromas.

 

The cherries are dried on raised African beds for approximately 12 - 15 days. In the daytime, they are raked and turned periodically to ensure a consistent drying process; covered between 12pm and 3pm to protect them from sun damage and at night time to protect them from rainfall and moisture

 

Once the coffee has dried to the right level, it is milled, graded, sorted, and thoroughly handpicked before being bagged in GrainPro for export from the port of Djibouti.
